There are certain ingredients that can completely transform the way you cook, and a good homemade green seasoning is one of them.

Fresh, fragrant and packed with Caribbean flavour, this vibrant blend of herbs, aromatics and peppers is the kind of kitchen staple that makes preparing delicious meals feel almost effortless.

Whether you're marinating chicken, seasoning fish, adding depth to vegetables or bringing a little extra life to a pot of rice, Jamaican-style green seasoning is a wonderfully versatile addition to your cooking routine.

And the best part? You don't need a cupboard full of complicated ingredients or hours in the kitchen to make it.

With a handful of fresh ingredients, a blender and around 15 minutes, you can create a homemade seasoning blend that brings the flavours of the Caribbean into your everyday meals.

Welcome to your new fridge essential.

What Is Jamaican Green Seasoning?

Green seasoning is a fresh herb and aromatic blend used across the Caribbean, with recipes varying between countries, households and individual cooks.

In Jamaican kitchens, ingredients such as scallion, thyme, garlic, onion, ginger and Scotch bonnet pepper are familiar foundations for flavourful cooking.

This Jamaican-inspired version brings those ingredients together with fresh parsley, sweet pepper and a little lime juice to create a vibrant, spoonable seasoning that can be used as a marinade or cooking base.

Think of it as a shortcut to building flavour without relying on a long list of bottled sauces or seasoning mixes every time you cook.

It's particularly useful when you're preparing meals ahead of time or want to make a simple dish taste a little more special.

Why Make Your Own Green Seasoning?

There's absolutely a place for convenient shop-bought seasonings, but making your own gives you more control over the ingredients and flavour.

You can adjust the heat, experiment with your favourite herbs and make a batch that suits the dishes you cook most often.

It also gives you a practical way to use fresh herbs and aromatics before they go to waste.

For The Feel Good Vibes Co., this is what feel-good cooking is all about: finding simple ways to make nourishing, satisfying meals that you genuinely look forward to eating.

And when you've already got a jar of homemade seasoning waiting in the fridge, putting together a flavour-packed dinner becomes that little bit easier.

Easy Jamaican Green Seasoning Recipe

Prep time: 15 minutes

Cooking time: None

Yield: Approximately 350–450ml, depending on ingredient sizes and blending consistency

Difficulty: Easy

A fresh, aromatic Jamaican-inspired seasoning blend for chicken, fish, vegetables, beans and everyday Caribbean cooking.

Ingredients

  • 6 scallions (spring onions), roughly chopped

  • 1 medium onion, peeled and chopped

  • 1 green sweet pepper, deseeded and chopped

  • 6 garlic cloves, peeled

  • 1 thumb-sized piece of fresh ginger, peeled

  • 8–10 sprigs of fresh thyme, using the leaves and tender stems

  • 1 small handful of fresh flat-leaf parsley

  • ½–1 Scotch bonnet pepper, depending on your preferred heat level

  • Juice of 1 lime

  • 2 tablespoons of water, plus a little extra if needed

  • 1 tablespoon of olive oil (optional)

  • ½ teaspoon of freshly ground black pepper

Optional additions: A small handful of fresh coriander or a pinch of ground allspice for additional depth.

A note on Scotch bonnet pepper: Scotch bonnet brings a distinctive fruity heat to Caribbean cooking. For a milder seasoning, start with a small piece and add more to taste. Removing the seeds and inner membranes can reduce some of the heat. Wash your hands thoroughly after handling the pepper and avoid touching your eyes.

How to Make Jamaican Green Seasoning

Step 1: Prepare your ingredients

Wash the herbs, scallions and peppers thoroughly. Peel the onion, garlic and ginger, then roughly chop everything into pieces small enough for your blender or food processor.

Step 2: Add everything to your blender

Place the scallions, onion, sweet pepper, garlic, ginger, thyme, parsley and Scotch bonnet into a blender or food processor.

Add the lime juice, water, black pepper and optional olive oil.

Step 3: Blend to your preferred consistency

Pulse until the ingredients form a thick, fragrant green mixture.

Stop occasionally to scrape down the sides. Add a little more water if necessary, but avoid making the seasoning too watery. You want a consistency that is easy to spoon over your ingredients while still retaining plenty of fresh flavour.

Step 4: Taste and adjust

Taste a small amount and adjust the lime, herbs or pepper to your preference.

Remember that the seasoning is concentrated and will usually be added to other ingredients rather than eaten on its own.

Step 5: Store and enjoy

Transfer the seasoning into a clean, airtight container and refrigerate immediately, or divide it into small portions and freeze for later use.

Five Delicious Ways to Use Your Green Seasoning

One of the things I love most about homemade green seasoning is how easily it can be incorporated into different dishes.

You don't need to reserve it for a particular recipe. Once you've made a batch, you can experiment with all sorts of everyday meals.

1. Marinate Chicken

Coat chicken with green seasoning, a little oil and your preferred dry spices before cooking.

Try approximately one to two tablespoons of seasoning per 500g of chicken, adjusting the quantity to suit your taste.

It's a lovely starting point for grilled, baked or air-fried chicken.

2. Bring Fish to Life

Rub a little seasoning over salmon, snapper or another favourite fish before baking or grilling.

Add lime and fresh thyme for an extra burst of flavour.

3. Give Vegetables a Caribbean Twist

Add a spoonful to sautéed callaloo, cabbage, mushrooms or roasted vegetables.

It's a simple way to bring extra flavour to vegetables without making the cooking process complicated.

4. Add Depth to Rice, Beans and Peas

Stir a little green seasoning into the cooking base for rice dishes, beans or peas.

The fresh herbs and aromatics add another layer of flavour to everyday staples.

5. Build Flavour in Soups and Stews

Add green seasoning when sautéing your onions and other aromatics before introducing the remaining soup or stew ingredients.

It's particularly useful when preparing Caribbean-inspired vegetable soups, chicken stews and hearty bean dishes.

How to Store Homemade Green Seasoning

Because this recipe uses fresh ingredients and has not undergone a tested preservation process, it should be treated as a fresh prepared food rather than a shelf-stable bottled sauce.

Keep your seasoning refrigerated in a clean, airtight container at 5°C or below and use it within 48 hours, or freeze it promptly in small portions for longer storage.

An ice cube tray is particularly useful here. Once frozen, transfer the seasoning cubes into a labelled freezer-safe container or bag.

For the best flavour and quality, aim to use your frozen seasoning within approximately three months.

Always use clean utensils when removing seasoning from the jar. If any seasoning has come into contact with raw meat or fish, do not return it to the original container or use it as an uncooked sauce.

For best results, add frozen seasoning directly to dishes that will be thoroughly cooked.

Can You Make Green Seasoning Without Scotch Bonnet?

Absolutely.

If you enjoy the aromatic flavour but prefer less heat, simply leave out the Scotch bonnet or replace it with a little extra green sweet pepper.

You can also adjust the herbs depending on what's available.

Some Caribbean green seasoning recipes include coriander, celery, chadon beni or other fresh ingredients.

There is no need to make every batch exactly the same. Once you find a combination you love, you can make it your own.

The Glow Kitchen Tip: Prep Once, Flavour All Week

Making a batch of green seasoning is one of those small kitchen habits that can make everyday cooking feel much more manageable.

Divide your seasoning into individual portions and freeze them. When you're ready to cook, you've already got a flavourful base waiting for your next meal.

Pair it with a few prepared vegetables, your favourite protein and a satisfying carbohydrate, and you're well on your way to a delicious feel-good plate.
